A real Italian sub. Loads of prosciutto cotto, salame toscano, mortadella, coppa and sopressata. For cheese we add provolone and mozzarella. For flavoring we add spinach and peppadew peppers. All served in a big hunk of foccacia drizzled with balsamic vinegar, olive oil, kosher salt, freshly cracked black pepper and italian seasonings.
We had to have this Italian classic on the menu. Our house made foccacia with vine ripened tomatoes, fresh mozzarella and fresh basil, drizzled with balsamic, kosher salt and freshly cracked black pepper. For a special treat, ask for it to be put on the panini grill.
With no disrespect to our Francophile friends, I think our Italian version of the 'Croque Monsignor' is the ultimate ham and cheese. We use our house made foccacia, prosciutto cotto, provolone cheese, our homemade mayonnaise and a touch of Dijon to great effect. It's even better on the panini grill.
This one means for the 'little ones.' Remember being a little kid and having a bologna sandwich on white bread with American cheese and yellow mustard. Wasn't that awful. Why do that to your kids? Give them something to remember with a slice of tuscan loaf, mortadella with pistachio, provolone cheese, homemade mayonnaise and a touch of Dijon.
A new addition to Correri's Kitchen. Porchetta, provolone, red pepper, yellow pepper, sundried tomato and salt & pepper - it's a bright awaking for your taste buds. Try on the panini grill to bring out the flavors.
